On this page you will find all kinds of quick and easy recipes....these are my favorites, just because they are so simple and that counts for alot when you have two kids tugging at your apron strings hollering for juice and a snack or pens and paper or.....I could go on, but I'm sure you know what I mean! So try a couple out and see if you don't agree....simple, tasty, kids will eat it....it's a keeper!

Crispy Potato Wedges
4 medium potatoes                 1 tbsp vegetable oil
1/4 tsp ground black pepper       1/8 tsp salt
2 cloves garlic, minced

Peel and cut potatoes into large wedges, place in a
large bowl with cold water to cover.  Let stand for 15
minutes.  Preheat oven to 425deg.  Spray a non-stick
baking sheet with cooking spray.  Set aside.
Drain potatoes and dry, place in another lrg bowl and
sprinkle with oil, pepper, salt and garlic.  Arrange
seasoned potato in single layer on baking sheet and 
bake for 20 minutes, turn and bake until golden.(about
another 20 minutes).

Chicken Stir-Fry
3 lg chicken breasts, boneless     4 carrots, sliced
and skinless, cut into stips       5 sticks, celery, sliced
4 cloves garlic, minced            1 large onion, chopped
1 1/2 cup snow peas                3 scoops, bean sprouts
6 tbsp soy sauce                   1 tbsp fresh grated ginger
1 grn pepper, sliced               1 red pepper, sliced
1 pkg chicken broth                1/2 tsp lemon pepper
1/4 tsp celery salt                1/4 tsp white pepper
3/4 tsp parsley                    1/8 tsp cumin
2 tbsp cornstarch                  2 tbsp olive oil

Chop and slice all vegetables, place in bowl. Cut chicken 
breasts into strips and place in another bowl.  Mix chicken
broth according to pkg directions and add 4 tbsp soy sauce,
and all spices.  Mix cornstarch with small amount of warm
water and blend into a paste.  Add to sauce and stir well.
Heat  half the oil in wok and begin cooking chicken.  Add
2 tbsp soy sauce when 3/4 done and stir until completely
cooked.  Remove from wok. Heat remaining oil in wok and add
vegetables, carrots first as they take longer to cook through.
Again add 2 tbsp soy sauce when vegetables are 3/4 done and
continue to cook until tender.  Add cooked chicken and sause
mixture and stir until liquid thickens.  Remove from wok and
serve over cooked rice or noodles.

Tuna Loaf
2 eggs, beaten                     3 tbsp lemon juice
2 tbsp minced onion                1 tbsp margarine
1 tsp salt                         1/4 tsp pepper
1 tsp dill                         2 cans tuna, with juice
3/4 c milk                         2 cups bread crumbs

Mix ingredients well and pack into greased casserole dish.

Topping:
1 cup crushed crackers             1/2 cup melted margarine
1/2 cup shredded cheese 

Mix together, and sprinkle on top of loaf, pressing into batter.
Bake at 350deg. for 1 hour.

Beef Stoganoff Sandwich
2 lbs ground beef                  1/2 cup onion, chopped
1 tsp salt                         1/2 tsp garlic powder
1/2 tsp pepper                     1 loaf French bread
Margarine, softened                2 cups sour cream
2 tomatoes, seeded & diced         1 lrg grn pepper,diced
3 cups shredded cheddar cheese

Brown ground beef and onion, drain.  Add salt, garlic powder
& pepper.  Cut bread lengthwise in half; butter both sides
and place on baking sheet.  Remove meat mixture from heat;
stir in sour cream.  Spoon onto the bread; Sprinkle with
tomaotes, peppers and cheese.  Bake at 350deg. for 20 minutes
or until cheese is melted.  (Bake longer if for crispier
bread)  Yeild 8-10 servings.

Hamburger Soup
1 1/2 lbs ground beef, lean        1 can Tomato soup
30oz beef consomme                 4-6 tbsp pearl barley
4 carrots, chopped                 1 onion, chopped
28oz can tomatoes                  1 sm grn pepper, chopped
3 sticks celery, chopped           1 bay leaf
1/2 tsp thyme                      1 tbsp parsley
Pepper to taste                    2 cups water, or more.

Brown ground beef, drain and rinse.  Add all other ingredients
in a large soup pot, and bring to a boil.  Reduce heat and
simmer for 1 to 1 1/2 hours.   Remove bay leaf before serving.

Mom's Sloppy Joes
1 1/2 lbs ground beef, lean        5.5oz can tomato paste
28oz can tomatoes, drained         1 tsp salt
1/2 tsp white pepper               1 tsp oregino
3/4 tsp marjoram                   3 tbsp chili powder
1 tsp thyme                        5.5oz water
3 cloves garlic, minced

Brown ground beef, drain and rinse.  Add onion, garlic and 
all spices.  Mix well.  Add can tomatoes, paste and water.
Reduce heat and simmer to desired thickness.

Super Easy Stir-fry Mixture
2 tbsp corn starch                 1 pkg Borvil boullion base
1 cup warm water                   1/2 tsp ginger
2 tbsp soy sause                   1 tsp Lemon Pepper or other
                                   favorite spice

Mix ingredients and pour into wok with cooked meat
and vegetables.  Simmer and allow to thicken.
Add to all your favorite stir-fry recipies instead of
pre-packaged mixes which can contain alot of MSG.
