These are a few of my families favorite recipes. These are tried and true. These are even favorites of my children. Is I type in more, you will see them. Hopefully, one or more a week. The ones I have in here now are:
Heinz 57 Meatloaf

Super Fast Pie Crust
Chocolate No-Bake Cookies
3/4 cup unpopped corn(pop it)
Melt in sauce pan
1 cube margarine
½ cup brown sugar
8 large marshmallows
1 - 3 large tbsp. Marshmallow creme(optional)
When melted, pour over popped corn and stir to coat.
Heinz 57 Meatloaf
1 ½ lbs. Lean ground beef
1 egg slightly beaten
1 cup soft bread crumbs(1 ½ - 2 slices of bread)
½ cup milk
3 tbsp. Heinz 57 sauce
1 1/4 tsp. Salt
dash of pepper
Mix all ingredients and shape into loaf and place in a lightly greased baking pan(8x4x1 ½ inch)
Brush top with additional Heinz 57 sauce. Bake in 350o oven for 1 hour. Let stand 5
minutes before slicing.
Pumpkin Cookies
1 ½ cup sugar
½ cup shortening
1 egg
1 cup pumpkin
1 tsp. Vanilla
1 tsp. Cinnamon
½ tsp. Salt
½ tsp. Baking soda
1 tsp. Baking powder
2 ½ cups flour
Mix ingredients in order and bake at 400o for 12 minutes.
*Can add ½ cup chopped walnuts of chocolate chips.
Rhubarb Cobbler
Topper:
1 cup flour
2 tbsp. Sugar
1 ½ tsp. Baking powder
1/4 tsp salt
1/4 cup butter
1 egg beaten
Sift dry ingredients together. Cut in butter to small chunks. Add egg to moistened mixture.
Cobbler:
1 cup sugar
1/4 tsp. Ground cinnamon
4 cups sliced rhubarb(1" pieces)
2 tbsp. Corn starch
1 tbsp. Water and butter
Mix cobbler ingredients together and put in round baking dish. Spoon topper in 6 mounds on
top of cobbler. Bake at 400o for 20 - 25 minutes. Makes 6 servings.
Mother Goose Popcorn(pink )
Combine:
2 cups sugar
1 cup milk
Add:
2 tbsp. Butter or margarine
1 tsp. Light corn syrup
Stir until it comes to a boil. Let boil 12 minutes(soft ball stage) being careful not to scorch. Add
a few drops of red food coloring and 1 tsp. vanilla. Pour over 4 quarts of popped corn, stirring
constantly. Sprinkle a little salt over popped corn.
Rice Casserole
1 can cream of celery soup
1 can cream of chicken soup
1 cup milk
2 cups cooked rice
1 lb. browned hamburger(drained)
1/3 cup chopped onion(browned with hamburger)
1 small can chow mein noodles
Combine all ingredients but noodles in a 2 qt. Casserole dish. Sprinkle noodles on top.
Bake at 350o until hot, about 10 - 15 minutes.
Turkey Noodle Bake
1 ½ cup Milk
1 - 10 oz. Can cream of mushroom soup
3 beaten eggs
2 cups fine noodles(cooked and drained)
2 cups cubed cooked turkey
1 cup soft bread crumbs(1 ½ slices)
4 oz. Sharp cheddar cheese(shredded 1 cup)
1/4 cup chopped green pepper
1/4 cup butter or margarine(melted)
Blend milk and soup; stir in eggs. Add noodles, turkey, bread crumbs, cheese, green pepper and margarine. Turn into 12 x 7 ½ x 2" baking dish(rectangular cake pan).
Bake in moderate oven (350o) for 30 to 40 minutes or till knife inserted off center comes
out clean. Cut in squares to serve. Makes 6 - 8 servings.
Fantasy Fudge
This recipe comes from the Kraft marshmallow creme jar. It's fast, easy, and everyone loves it!
Prep. Time: 10 minutes plus cooling
Cooking time: 15 minutes
1 ½ cups(3 sticks) Parkay Margarine
6 cups sugar
1 1/3 cups evaporated milk
2 packages(12 oz. Each) Semi-sweet chocolate chips
1 jar(13 oz.) Kraft Marshmallow creme
2 cups chopped nuts(optional)
2 teaspoons vanilla
*Mix margarine, sugar and milk in heavy 5-quart saucepan; bring to full boil, stirring constantly.
*Continue boiling 5 minutes over medium heat, or until candy thermometer reaches 234 degrees,
stirring constantly to prevent scorching. Remove from heat.
*Gradually stir in chips until melted. Add remaining ingredients and mix well.
*Pour into 3 greased(or lined with wax paper) 9 inch square or 2 - 13x9 inch baking pans. Cool
at room temperature; cut into squares. Makes about 6 pounds.
*Variation: I like to use 1 bag milk chocolate chips and 1 bag peanut butter chips instead. This
tastes like peanut butter cups.
Kentucky Fried Chicken Coating Mix(as good as the Coronel's)
3 cups self-rising flour
1 tbsp. Paprika
2 packages Knorr's Beefy Tomato Soup
2 small packages Good Seasonings Italian Dressing
1 tsp. Season salt
Fryer chicken
1/4 pound margarine melted
Shake the ingredients together in a bag. Place on an ungreased cookie sheet. Bake in 350o
oven for 1 hour turning during cooking. When done, dribble with melted butter and
serve.
Avocado Dip(Guacamole)
3 large ripe avocados
1 8 oz. Cream cheese
2 - 8 oz. Sour cream
2 tbsp. Diced green onion
garlic salt to taste
3 or 4 chili tepinies(chopped) or ½ to 1 tsp. Tabasco sauce
1-2 tsp. Lemon juice to taste
Mash ripe avocados and blend with the remaining ingredients. Serve with tortilla chips.
Super Fast Pie Crust
I got this recipe when I sold Tupperware a long time ago. It is a fast and easy recipe that anyone
can do for a flaky crust.
Combine in a plastic bowl with a seal:
2 cups flour
1 tsp. Salt
2/3 cup shortening(if soft, put into refrigerator until firm)
Shake bowl with lid on until consistency of corn meal. Make indentation in center of mixture
and add 6 - 8 tbsp. cold water. Return lid and swirl bowl until it forms a ball. Makes enough
dough for 1 - 2 crust pie and 1 - 1 crust pie.
Chocolate No-Bake Cookies
2 cups sugar
4 tbsp. Cocoa
½ tsp. Salt
½ stick margarine
½ cup milk
2 ½ cup quick oats
½ cup peanut butter
1 tsp. Vanilla
Mix sugar, cocoa and salt in a sauce pan 1 ½ quart size. Add margarine and milk; bring to a
boil. Boil for 1 minute and 30 seconds, stirring constantly with a wooden spoon. Remove from
heat; add remaining ingredients. Mix for 1 minute; drop by spoonfuls onto waxed paper. Chill
until firm.
