Vanilla Cream Pie
Ingredients:
3/4 cup sugar 1/4 cup cornstarch or 1/2 cup all purpose flour 3 cups milk 4 eggs 1 tbsp. butter 1 1/2 tsp. vanilla Baked pastry shell Meringue |
For filling, in a medium saucepan combine sugar and cornstarch or flour.
Gradually stir in milk. Cook and stir over medium to high heat till mix
is thickened and bubbly. Reduce heat; cook and stir for 2 min. more. Remove
from heat.
Separate egg yolks from whites; set whites aside for meringue Beat egg yolks lightly with a fork. Gradually stir in about 1 cup of the hot filling into yolks. Return all to saucepan; bring to a gentle biol. Cook and stir 2 min. more. Remove from heat. Stir in butter and vanilla. Pour the hot filling into pastry . Evenly spread meringue over hot filling; seal to edge. Bake in 350 oven for 15 min. Cool, and chill to store. Serves 8. Coconut cream pie: Prepare as above, except stir in 1 cup flaked coconut with butter and vanilla. Sprinkle another 1/3 cup flaked coconut over meringue before baking. Banana cream pie: Prepare as above, except before adding filling, spread 3 med. bananas, sliced into the bottom of the baked pastry shell . Dark chocolate cream pie: Prepare as above, except increase the sugar to 1 cup. Stir in 3 squares unsweetened chocolate, chopped, with the milk. Milk chocolate cream pie: Prepare as above, except stir in 3 squares semi-sweet chocolate, chopped with the milk. |
