EASY HAMBURGER QUICHE
(Now THIS sounds good!!)
* 1- 9 inch pie shell
* 1/2 cup mayonaise
* 1/2 lb ground beef
* 1/2 cup milk
* 1/2 lb chopped cheese
* 2 eggs
(cheddar or swiss)
* 1 tbsp cornstarch
* 1/3 cup onion, chopped
dash of pepper
or finely grated
Brown meat in skillet over medium heat. Drain fat and set aside.
Blend mayonaise, cornstarch, milk and eggs together. Stir in meat,
cheese, onion and pepper. Turn into pie shell. Bake at 350 degrees,
35-40 minutes, until golden on top, and knife inserted in center
comes out clean.
***Ground turkey can be used in place of beef
***Doubling the meat, mayo,milk, and cheese
can be used for a deep dish pie shell.

SUGAR FREE CHOCOLATE CHIP COOKIES
* 2 cups Graham cracker crumbs
* 6 packets sweet-n-low
* 1/2 cup walnuts (optional)
* 1/4 tsp salt (optional)
* 3 ounces semi-sweet chocolate chips
* 1 cup milk
Preheat oven to 250 degrees. Combine all ingrediants and stir well. Pour
into a greased 8-inch square pan. Bake 30 minutes. Cut while warm.

OHIO BUCKEYE COOKIES
(Peanut butter cups)
* 1 stick margarine (softened)
* 3 cups Rice Krispies (crushed)
* 1 lb confectioners sugar
* 12-ounces chocolate chips
* 2 cups peanut butter
* 1/2 slab paraffin wax
Mix together with hands and form into little balls. Let stand about 1 hour
until they dry out some. Melt chocolate chips and paraffin in a double
boiler. Dip balls and let sit on wax paper until cool. Makes between
5 and 6 dozen.
MOIST BREAD STUFFING
* 1 cup butter or margarine
* 2 tsp poultry seasoning
* 2 cups diced celery
* 1/2 tsp pepper
* 1 1/2 cup chopped onion
* 18 cups white bread cubes
* 2 1/4 tsp salt
* 3 eggs, slightly beaten
* 1/4 cup minced parsley
Melt butter in a Dutch oven, or stock pot, cook celery and onions over
medium heat until tender. (about 10 minutes). Add parsley, salt, poultry
seasoning and pepper; stir until well mixed. Stir in bread cubes and eggs,
mix well. Lightly stuff bird and bake remainder with bird (if you choose)
during last 35 or 40 minutes of roasting time. OR place
all of stuffing in
casserole dish and bake, covered , in 325 degree oven for 30 to 45
minutes, until top is slightly browned.

THROW TOGETHER
BEEF
AND BEER CASSEROLE
(Also a great pie filling!!)
You can do this in a crockpot or similar - so the type of beef doesn't
matter, it will usually turn very tender because of the slow cooking
method.......
You can use whatever amount you wish - from enough for one or two
people to a whole crockpot full! :) We use kilos
(not pounds) over
here so I think that will stuff it up for you all,
rofl.
If you make a large amount, you can freeze it when done and use at a later
stage - and make yourself a tasty pie with the bit you don't freeze.
Ingredients:
---------------
1 kilo of beef (approx. .4 large steaks to give you Americans an
idea)
lol.
Beef Round Steak, Rib Eye Fillet - whatever you wish to use will turn out
tender in this dish.
Throw in any vegetables you can think of !!
Quartered potatoes, Roughly chopped (large pieces) Onions,
Carrots,
Celery, Peas, Beans, Corn Kernels, Broad Beans, Cauliflower, Zucchini,
Squash, Red or Green Capsicum (I think you guys call that chili?) (Anything
your little heart desires).
1 cup of uncooked Pasta (any type - corkscrews, shells, spaghetti,
fettucini, etc, etc)
1 Tin of Canned Tomatoes in Juice (do you have that over there?)
lol - if
not, then a can of tomato juice will do, or tomato paste.....or bolognaise
sauce - anything tomatoey......
Some gravy to mix up in your beer......do you have gravy satchets over
there??
One Tablespoon of Plain Flour
1 Stubby of Beer (small bottle of beer - or a can will do)
Salt/Pepper/Spices to taste.
Method

Trim off all of the fat and nasties from the steaks, and cut into
medium-sized chunks.
Throw into crockpot (slow-cooker?)
Cut up all of the vegetables into medium sized pieces and throw in as
well.....(there will be a lot of throwing in here, hence the name of the
dish lol).
Mash down the tomatoes in the tin and throw them and the juice into the
crockpot.
Throw in your cup of uncooked pasta.
Place beer in a mixing bowl and add gravy satchet and flour - whisk
until
moistened, then add salt/pepper and spices etc. If you dont
have gravy
powder in America - use three tablespoons of flour and a beef stock
cube
(oh, do you have beef cubes?) ROFL.
This is funny - I really don't know if you guys have the same sort of stuff
that we have, lol.
So anyway, where were we ?......hmm.....ok...now pour the beer mixture
over all of the ingredients in the crockpot and give it all a good stir.
Put the lid on and set your slow cooker on high and leave for one hour
before you give it a stir again....when it does come to the bubbly stage,
let it simmer for a good 3 hours at least - the longer the better -
and if
you want to let it thicken up a bit before you serve it, take off the lid
for about 1/2 hour before serving time.
Serve with either rice or mashed potato, or simply with bread and butter.

This is real yummy and I usually make this up and then fill a container
or
two and place them in the freezer for another time - now the casserole
that
is left, can be made into a LOVELY pie to eat immediately.
Now! - Here is some pastry that i prepared earlier! lol ;)
Simple line your pie dish with pre-prepared shortcrust pastry and place
your
(COOLED) filling into the pie dish. Top with a pre-prepared puff
pastry
and seal the ends. Brush the top with a little milk and place in a HOT
oven (220 degrees C) I dont know what in farenheit - maybe
450?? - well
HOT anyways lol.
Cook for 15 to 20 mins or until the puff pastry on top has browned nicely.
See what I meant about originality!! No-one but OUR Lynn!!!
