HOLIDAY GOODIES
An all time favorite of mine that is sure to please the palate!
PUMPKIN BREAD
* 3 eggs
* 1 tsp cinnamon
* 3 cups sugar
* 1 tsp nutmeg
* 1 cup Wesson Oil
* 1 tsp cloves, ground
* 1 16 ounce can Pumpkin
* 1/2 cup pecans, chopped
* 3 cups flour, all purpose
* 1/2 cup walnuts, chopped
* 1/2 tsp baking powder
* 1/2 cup raisins
* 1 tsp baking soda
Combine flour, baking powder, soda and spices. Mix together
with fork and set aside. Combine eggs, sugar, Wesson Oil and
pumpkin. Beat with electric mixer until well mixed. Add flour
mixture and beat until smooth. Add nuts and raisins and mix
with spoon. Grease and flour 3 (1 lb) coffee cans. Distribute
batter in equal amounts in each can. Bake in 350 degree oven for
1 hour or until done. (Usually takes over 1 hour). Cool. Remove
from can, wrap in saran wrap and store in clean coffee can.
May be frozen.
OATMEAL COOKIES
* 1 cup shortening
* 1 tsp baking powder
* 1 1/2 cups brown sugar
* 1 tsp salt
* 2 eggs
* 1 tsp cinnamon
* 1/2 cup buttermilk
* 1 tsp nutmeg
(or sour milk)
* 3 cups quick-cooking rolled oats
* 1 3/4 cups flour,all purpose * 1 cup raisins
* 1 tsp baking soda
* 1/2 cup walnuts, chopped
Cream shortening,sugar and eggs together till light and fluffy. Stir in
buttermilk.Sift together dry ingredients; stir into creamed mixture.
Stir in oats, raisins, and nuts.Drop from tbsp 2 inches apart on lightly
greased cookie sheet. Bake in hot oven, (400 degrees) about 8
minutes. Cool slightly; remove from pan. Makes about 3 dozen
cookies.
COCONUT KISSES
* 3 egg whites
* 1 1/2 cups flaked coconut
* 1/2 tsp vanilla
* 1/2 cup chopped nuts
* 1 cup sugar
(your choice)
* 2 cups cornflakes
* 2 1-ounce squares semisweet
* 2 tsp shortening
chocolate
Beat egg whites with dash of salt and vanilla to soft peaks; gradually
add sugar; beat stiff. Stir in cereal, coconut, and nuts. Drop from tsp
onto well greased cookie sheet. Bake at 350 degrees for 18 to 20
minutes. Remove cookies immediately. If they stick to pan, return to
oven to soften. Melt chocolate and shortening together; drizzle atop
cookies. Makes 3 1/2 dozen cookies.
PECAN CRISPIES
* 1/2 cup butter or margarine
* 1/2 tsp vanilla
* 6 tbsp brown sugar
* 1 1/4 cups flour, all purpose
* 6 tbsp sugar
* 1 tsp baking powder
* 1 egg
* 1 tsp baking soda
* 1 cup pecans, chopped
* 1 tsp salt
Cream butter and sugar until light. Beat in egg and vanilla. Sift together
dry ingredients; blend into creamed mixture. Stir in nuts. Drop from tsp
on ungreased cookie sheet. Bake at 375 degrees about 10 minutes.
Cool cookies slightly before removing from pan. Makes 2 1/2 dozen.
PEANUT BUTTER COOKIES
* 1/2 cup butter or margarine
* 1/2 tsp vanilla
* 1 cup peanut butter
* 1 1/4 cups flour, all purpose
* 1/2 cup sugar
* 3/4 tsp baking soda
* 1/2 cup brown sugar
* 1/4 tsp salt
* 1 egg
* 2 1/2 cups sugar
Thoroughly cream butter, peanut butter, sugars, egg, and vanilla. Sift
together dry ingredients; blend into creamed mixture. Shape into
1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie
sheet.
Press 5 peanut halves atop each or crisscross with fork tines. Bake at
375
degrees for 12 minutes. Cool slightly;remove from pan. Makes 4 dozen.
DIVINITY
* 2 1/2 cups sugar
* 1/2 cup light corn syrup
* 2 egg whites
* 1 tsp vanilla
In 2-quart saucepan, combine sugar, corn syrup, 1/4 tsp salt,
and 1/2 cup water. Bring to hard boil (260 degrees) stirring
only until sugar is disolved. Meanwhile, beat egg whites to stiff
peaks. Gradually pour syrup over egg whites, beating at high
speed on electric mixer. Add vanilla and beat until candy holds its
shape, 4 to 5 minutes. Quickly drop from tsp onto waxed paper.
Press1/2 pecan to top of each candy. Makes about 40 pieces.
