Yum Spuds
6 medium red potatoes
2 tbsp vegetable
oil
1 tbsp lemon juice
1/2 tsp basil
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp garlic
powder
1/2 tsp pepper
1/2 tsp salt
1. Scrub unpeeled
potatoes and cut into thick slices
2. In a bowl,
sprinkle the potatoes with oil, lemon juice, salt, pepper and
seasonings.
3. Toss well to
coat potatoes evenly.
4. Spread out
potatoes on a large, rimmed baking sheet.
5. Bake in a pre-heated
oven at 400 F for 40 to 60 minutes until golden brown. Turn once.
