Mum's Sugar Cookies
1 cup shortening
1/2 cup sugar
1 egg
1 tsp vanilla
1/2 tsp salt
2 cups flour
1 tesp baking powder
1/2 cup milk (scant)
Cream shortening and sugar. Add egg and vanilla and beat well. Add
dry ingredients and just enough milk to make a stiff dough. Roll in sugar.
May be cut into fancy shapes and decorated for Christmas.
Mum's Raisin Cookies
1 1/2 cup brown sugar
1 cup shortening
1 egg
4 tbsp milk
2 1/2 cups flour
1/2 tsp baking soda
2 tbsp baking powder
raisins, to liking
Cream brown sugar and shortening. Add remaining ingredients. Roll
out and cut. Bake at 350F.
Quick Oatmeal Cookies
1/4 cup sugar
1/2 cup lard
pinch salt
1 tsp vanilla
1 egg
1/2 cup milk
1 cup oatmeal
1/2 cup raisins
1 cup flour
1 tsp baking powder
Mix all ingredients until stiff. Put spoonful on pan and bake at
400F until golden brown, aprroximately 10 minutes.
Molasses Cookies
1/2 cup shortening
1/3 cup brown sugar
1 egg
1/2 cup molasses
1/4 cup milk
2 cups flour
1/2 tsp salt, ginger, and baking soda
Cream shortening and sugar. add egg, molasses and milk. Sift dry
ingredients into creamed mixture. Beat well. Drop onto greased cookie sheet.
Bake at 400F for 10 minutes.
Antrim Cookies
4 oz margarine (hard)
4 oz Crisco
1 cup granulated sugar
1 cup soft brown sugar
1/4 tsp vanilla essence
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking powder
1 tsp baking soda
3/4 cup coconut
1 3/4 cups quick oats
1 cup corn flakes, crushed
Cream the fats, sugar and vanilla essence. Gradually mix in dry ingredients. Roll into balls; dip in sugar. Bake at 350F on cookie sheet for 30 minutes.
