CrockPot Roast
3 pounds of chuck roast or any other meat
1 pound of carrots peeled and sliced
1 package of dry onion soup mix
1 can of cream of mushroom soup
Brown the meat in a little bit of oil, then cut into pieces and put into the crockpot, season with garlic salt and seasoning salt. Top with the carrots; mix the cream of mushroom soup with 1 can of water. Mix the dry onion soup with 1 cup of water; pour all of this in the crockpot.
Cover and cook on low for 10 hours or until the meat and carrots are tender. I like to serve this dish with mashed potatoes and dinner rolls.
Chili&Rice
1/2 pound of soaked&cooked pinto beans
1/2 pound of lean ground beef
1/2 cup of chopped onion
1-20oz. can of tomato sauce
1 teaspoon of oregano
1 teaspoon of italian seasoning
1/4 teaspoon garlic powder
1 tablespoon of chili powder
1 cup of cooked rice
Brown the ground beef and onion, drain the grease.
Add the tomato sauce,beans and the spices.
Simmer uncovered until thickened;serve over hot cooked rice.
Western Pot Roast
3 pounds of beef brisket or chuck roast
1 cup of chopped onion
1 cup of ketchup
1/4 cup of *Lea&Perrins Worcestershire Sauce*
2 tablespoons of brown sugar
2 tablespoons of cider vinegar
2 teaspoons of salt
In a heavy pot brown the meat on all sides in a little bit of oil. Add the chopped onion and cook until golden. Combine the ketchup,*Lea&Perrins Worcestershire sauce*, brown sugar, cider vinegar and salt;pour over the meat and simmer covered until the meat is tender. About 3 hours.
Easy Oven Stew
3 pounds of stew meat, cubed
6 stalks of celery, cut diagonally
2 teaspoons of salt
1 1/2 cups of tomato juice
3 tablespoons of minute tapioca
1 medium onion sliced
3 medium potatoes cubed (not to small)
6 carrots, cut diagonally
1 tablespoon of sugar
Mix the meat with the vegetables in a 9x13 baking dish. Blend
the salt, sugar, tapioca and tomato juice. Pour this mixture over
the beef.
Cover tightly and bake at 250 degrees for 4 hours.
1 can (10 3/4 ounces) *CAMPBELL'S beefy mushroom soup
1 tablespoon of soy sauce
1/2 teaspoon of ground ginger
hot cooked rice
In a 10 inch skillet or wok heat 1 tablespoon of vegetable oil
over medium high heat; stir fry the peppers, onion and garlic
until tender-crsip. Remove these and set aside.
In the same skillet add the other tablespoon of oil and stir fry
half of the beef until browned and set aside. Stir fry the
remaining beef, set that aside.
In the same skillet combine the soup, soy sauce, and ginger.
Return the beef and vegetables to the skillet; heat through,
stirring occasionally.
Serve over the hot cooked rice.
My Meatloaf
2 pounds of ground chuck
1 pack of dry onion soup mix
2 eggs
1stalk of celery chopped
3/4 cup of ketchup
2 tablespoons of milk
1 package of crushed saltine crackers
Sauté' the chopped onion and celery in a little bit of olive oil. Add
this and the remaining ingredients to the ground chuck and mix well. For
into a loaf and bake at 350 degrees for 1 to 1 1/2 hours or until done!
**During the last 15 minutes mix 1/2 cup of ketchup and 3 tablespoons of
honey and top on the meatloaf;makes a good tasting glaze for it!!
Meatloaf Surprise
1 pound of lean ground beef
1 potato, grated
1 carrot, grated
1/3 cup of uncooked rice
2-3 eggs, beaten
1/2 cup of crushed crackers
1 onion, chopped
1 can of stewed tomatoes
Combine all the ingredients together except the tomatoes; shape into a loaf and place in a baking dish or loaf pan. Pour the stewed tomatoes on top. Cover and bake at 350 degrees for 1 to 2 hours. Remove cover and let brown. It is best to let stand for 10 minutes before serving!
Taco Bake
1 pound of ground chuck
1/2 bottle of taco sauce or salsa
crushed nacho cheese flavored doritos
2 cups of cooked pasta (any variety)
2 cups of grated colby-jack cheese
Brown the ground chuck and drain off grease. Return to the skillet add
the taco sauce, cooked pasta; cook for 10 minutes. Place in a baking
dish top with the crushed doritos and the shredded cheese.
Bake at 350 degrees for 25-30 minutes.
Ground Beef Stroganoff
1 pound of lean ground beef
1/2 cup of onion, chopped
1 small can of mushroom pieces, drained
1-2 can of brown gravy
3/4 cup of water
1/4 teaspoon of black pepper
1/2 cup of sour cream
mashed potatoes
Brown the beef ,onions, and mushrooms; drain off the grease.
Add the water, gravy, and pepper stir and bring to a boil over
low heat stir constantly. Stir in the sour cream; pour in a baking
dish and top with the mashed potatoes. Bake @ 375 degrees for
20-25 minutes.
Ground Beef Casserole
8 ounces of egg noodles
1 1/2 pounds of lean ground beef
6 slices of diced bacon (uncooked)
2 cloves of garlic, chopped
1 onion, chopped
2 cans of tomato soup
1 teaspoon of salt
1/4 teaspoon of pepper
1 (4 ounce) can of sliced mushroom's
1/2 cup of grated cheese
Cook the noodles until almost tender. Sauté the ground beef, bacon,
garlic, and onion; drain off the grease. Combine the meat with the
noodles and the remaining ingredients. Pour into a baking dish; top with
the grated cheese and bake at 325 degrees for 1 hour or until done.
Rodeo Hash
1 pound of ground beef
3 cups of raw diced potatoes
1 cup of celery, sliced
2 tablespoons of shortening
1 can of *Campbells golden mushroom soup
1/2 cup of water
1/4 cup of chili sauce
1/2 teaspoon of salt
large dash of pepper
Brown the beef, celery, and potatoes in the shotening. Drain off the grease. Add the remaining ingredients cover and simmer for 10 minutes.
Chili Meatloaf
3 pounds of ground chuck
1 cup of milk
1 1/2 cups of soft bread crumbs
3 eggs
1/2 teaspoons of hot pepper sauce
2 teaspoons of salt
1 teaspoon of chili powder
1 envelope of chili seasoning
Mix all the ingredients together and place in loaf pans; bake at 350 degrees for 50 minutes or until done.
Hamburger Casserole
1 pound of lean bround beef
6 potatoes, sliced thin
1 can of dark red kidney beans (drained)
3 stalks of celery, sliced
2 onions, chopped
1 can of tomato soup
salt & pepper
Butter the bottom of a baking pan; put in all the ingredients; top with the soup and bake at 350 degrees for 2 1/2 hours.
