Julia's Korean Omelet

Ingredients:
1 cup of Rice, 2 eggs, 1/4 spam or equal amount of ham, 2 shitake mushroom, broccoli, 1 sheet of roasted sea laver (Gim in Korean, Nori in Japanese), 1/4 cup of shredded cheddar cheese, salt and grounded black pepper, oil

Directions:

 

  1. Cook Rice first.   

  2. Soak Shitake mushroom in warm water for 30 minutes.  Chop Shitake mushroom.  Chop spam or ham into small cubes, and cut broccoli into edible size pieces.  

  3. Stir fry broccoli, spam or ham, mushroom on a small skillet with salt and pepper.  When broccoli is cooked, add rice and fry a little more.    
  4. Stir eggs to mix whites and yokes well.  Add salt and pepper.     
  5. Coat big skillet with oil and fry egg mixture as big as possible.  Place sea laver on it, and add stir-fried rice mixture and cheddar cheese on half and cover with the other half of egg.
