Rice & Kimchi Casserole

Ingredients:
4 cups of Rice (serves 4-5), 1 1/2 cup chopped kimchi, 2 cup of shredded Mozzarella Cheese, 1 green onion, oil or butter, 1 tsp of sesame seed oil, 1 Tbs of rice vinegar (optional)

Directions:

 

  1. Cook Rice first. Mix rice with sesame seed oil and rice vinegar.  

  2. Pre heat oven for 350 F.  Chop kimchi and gently squeeze water out.  Shred mozzarella cheese.  Chop green onion finely.  Grease bottom of the casserole dish with oil or butter.  

  3. Place about half of rice flat on the casserole dish.  Place chopped kimchi over the rice, and place the other half of the rice over it.  
  4. Sprinkle Cheese over the top and put the dish into the oven.  Cook for about 40 minutes.  Take it out, and sprinkle finely chopped green onion over it, and serve.
