- Select
whole garlic and peel only outer skin. Cut stems short and clean well.
- In
a jar, place whole garlic and pour ½ cup of vinegar.
Pour water until the garlic are submerge under water.
Ferment this for five days in room temperature.
- In
a saucepan, pour 1 cup of soy sauce, 2 Tbs of sugar, and 2 Tbs of vinegar
and boil for a while. Chill in
room temperature.
- Take
out garlic from the jar, and pour out water. Place garlic into the jar, and
pour chilled sauce over.
- Every ten days, take out only sauce and boil and
pour the sauce back into the jar. Repeat
this process 4-5 times.
