Pickled Garlic 

(The process takes real long time. At least 45 days.)

Ingredients:

10 whole garlic, ½ cup of vinegar, water   

Sauce 1 cup of soy sauce, 2 Tbs of sugar, 2 Tbs of vinegar
  

Directions
  1. Select whole garlic and peel only outer skin. Cut stems short and clean well. 
  2. In a jar, place whole garlic and pour ½ cup of vinegar.  Pour water until the garlic are submerge under water.  Ferment this for five days in room temperature. 
  3. In a saucepan, pour 1 cup of soy sauce, 2 Tbs of sugar, and 2 Tbs of vinegar and boil for a while.  Chill in room temperature.
  4. Take out garlic from the jar, and pour out water. Place garlic into the jar, and pour chilled sauce over.   
  5. Every ten days, take out only sauce and boil and pour the sauce back into the jar.  Repeat this process 4-5 times.
