Noodle (Jang Guksoo)
Ingredients: |

oz of oriental style noodle (Makguksoo or Somyun) (serves 3), 5 cups of beef
broth, 5 cloves of garlic, one green onion, 2oz of ground beef, 2 eggs, 1
zucchini, 8 shitake mushroom, salt, 1tsp of oil, 2 tsp of sesame seed oil
Beef Seasoning (1Tbs of soy sauce, 2tsp of finely chopped green onion, 1tsp of finely chopped garlic, pepper, sesame seed oil, salt) |
Directions: |
(1) Boil beef
broth with 5 cloves of garlic, and one whole green onion for 20 minutes or so
over medium heat. (2) Season ground
beef with beef seasoning and fry until color turns brown. (3) Separate eggs
into yolks and whites and fry each. Cut
into diamond shapes. (4) Cut zucchini
into thin strips and put salt over it. Leave it for five minutes.
Squeeze water out, and fry over high heat for less than one minute. (5) Cut mushrooms
into thin slices and season with salt and sesame seed oil.
Fry quickly over high heat. (6) Boil noodle
until it becomes soft. (Usually 3-5 minutes) (7) Separate cooked noodle in three bowls, pour 1 ½ cups of boiled broth and place eggs, beef, zucchini, mushrooms on top. |
