This is a very simple recipe for the best Fried Cat Fish I have ever tasted. You just want to make sure you don't over cook or under cook the fish. You can serve with Tartar sauce if desired. I usually eat mine just the way they are.
Heat oil in shallow skillet on medium heat. Mix all dry ingredients in a pie pan. Put milk in a seperate pie pan. Dip each fillet first in milk then in dry mixture. Fry 2 to 3 fillets at a time until golden brown. Fillets are done when flakes apart easily with a fork. drain on paper towels to absorb excess oil. Serves 4-6.
