Nectar

This recipe was taken from the book Cooking the Austrian Way.

Ingredients:

5 ripe eating apples
1 bottle white wine, preferably a rhine or chardoney
1/4 cup sugar
1 lemon
1/2 bottle of champagne

Peel, core and thinly slice the apples. Place them in a dish and add thin slivers of the lemon peel and the strained lemon juice. Sprinkle with sugar and pour over them half of the white wine. Allow to stand for 12 hours in the refrigerator. Add the rest of the wine, and just before serving pour in the champagne. If desired, soda water can be used in place of the champagne.
