Atul's Naan Bread

Naan bread is an everyday staple in India. This recipe improves offers the improvement of being storeable, as it contains no eggs.

Ingredients:

3 cups all purpose flour
2 Tblsp vegetable oil
4 Tblsp plain yogurt
1 tsp yeast (1/2 packet)
1/2 tsp sugar
1/2 tsp salt
1 tsp baking powder
1/4 to 3/4 cup warm water

Mix all ingredients except for the water in a large bowl. Slowly add the warm water while mixing. Continue to add the water until a smooth textured dough is formed. Use as little water as possible. Knead for 2 minutes then reomve, cover and keep in a warm place to rise for about 2 hours.

Set a pizza pan or cookie sheet in the broiler and turn on oven. When the oven is hot, form the dough into balls about 3 inches in diameter. Roll the dough out into teardrop shapes.

Place the rolled out Naan on the very hot pan and bake for 2 to 3 minutes, until the bread puffs up and a few brun spots develop. Remove the baked Naan and brush with melted butter or ghee.

Notes:

For best results, place the rolled side of the bread face down on the pan. Also, if the pan is hot enough, you don't need to broil the other side.
