This recipe was taken from the book Cooking the Austrian Way. This recipe makes 2 - 3 loaves.
Ingredients:
6 cups flour
Dissolve the yeast in 2 Tblsp lukewarm water and let stand for 10 minutes. Put the flour in a
bowl and shread the butter into it. Add the mashed potatoes, raisins, cream and then the yeast
mixture. Knead for a few minutes, then turn out onto a floured surface and knead until smooth.
Allow to rise for 30 minutes. Shape into loaves and put into pans. Allow to rise until the size is
doubled. Keep dough covered while rising.
Glaze with beaten egg. After baking for 10 minutes at about 425°F lower the heat and finish
baking at about 350°F for 50 to 55 minutes.

1 oz. Yeast
1 cup cream
1 1/2 cups cooked potatoes, mashed
1/4 cup raisins, plumped for 5 minutes in hot water
1 egg
