Butterscotch Oatmeal Cookies

Ingredients:

1 1/2 cups flour
1 tsp baking soda
1 cup shortening
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 Tblsp hot water
1 package butterscotch chips
2 cups quick oatmeal
1 tsp vanilla
1 cup chopped nuts

Cream the shortening and sugars. Add the eggs and then the hot water, mix well. Add the flour and baking soda, followed by the nuts, oatmeal and vanilla. Blend well then add the butterscotch chips. Drop by spoon on a cookie sheet and bake at 375°F for 10 to 12 minutes. Transfer to a wire rack to cool.
