Lebkuchen

Taken from Christmas Cookies and candies by Irena Chalmers.

Ingredients:

3/4 cup honey
3/4 cup firmly packed, dark brown sugar
2 Tblsp butter, softened
1 egg, room temperature
Grated rind of 1 orange
3 1/2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 tsp ground cinnnamon
1 tsp allspice
1/2 tsp nutmeg
1/2 tsp ground ginger
3/4 cup chopped glaceed fruits
3/4 cup slivered almonds, finely chopped


Glaze
1 cup powdered sugar
2 Tblsp water

Pour the honey into a saucepan. Add the sugar and butter and heat until the sugar has dissolved and the butter has melted. Do not let the honey boil. Cool to room temperature and stir in the egg and grated orange rind. Sift the flour with the salt, baking powder, and spices and fold into the honey mixture. Fold in the glaceed fruit and almonds. Chill overnight or for up to 3 days if time permits. Preheat the oven to 350°F and spray cookie sheets with PAM. Cut the dough into 4 equal pieces, and then roll each portion into a rectangle about 6 inches by 5 inches by 1/2 inch thick. Cut into bars 1 inch by 2 1/2 inches. bake for 10 minutes and spread with glaze while still warm.

Place the powdered sugar in a small bowl and stir in the water to form a smooth mixture. Brush over the cookies and let to set. Store in an airtight container for about 2 weeks before eating..
