1 1/2 Cup swiss cheese, shreaded & divided
3 Cups French bread, cubed
1/2 pound fried pork sausage, crumbled
1 Cup onions, chopped
2 tsp fresh thyme, or 1/2 tsp dried
10 oz package, frozen chopped spinach, thaw & squeeze dry
9 large eggs
3 Cups milk
1 tsp dry mustard
1 tsp salt
1/4 tsp pepper
1 tomato, diced
Preheat overn to 350°F. Arrange the bread in a 8 x 10 inch baking pan. Bake for about 20 minutes, or until crisp. Remove from ovenand allow to cool, turn oven off. While the bread is cooling, brown the sausage in a large skillet, then drain on paper towels. Add the onion to the sausage grease and fry until translucent, about 2 minutes. Remove from heat and mix in the crumbled sausage and spinach until well mixed; set aside and allow to cool completely.
Arrange the bread in a shallow 3 quart baking dish. Sprinkle 1 cup of the cheese over the bread and then layer with the sausage mixture, then top with the remaining cheese. Beat the eggs, milk and mustard in a bowl until well blended. Carefully pour into the prepared dish. Sprinkle the top with tomatoes. Cover and refrigerate up to 24 hours. Bake at 325°F for 1 hour or until the center is just set. Let stand 10 minutes before serving.
