Ingredients:
2 tsp olive oil
1 small onion diced
1 clove garlic, coarsely chopped
1 1/2 tsp curry powder
1/2 tsp thyme
1/2 tsp crushed red pepper
1/2 cup dried lentils
6 oz smoked ham, diced
3 tblsp instant couscous
1 small apple diced
salt
pepper
Combine the oil, onion and garlic in a pan, place over low heat and the gradually stir in the spice mixture. Cover and cook until the onion is wilted and the spices are fragrant, about 4 minutes.
Stir in the lentils and 1 1/2 cups water. Increase the heat to moderately low recover and allow to cook until the lentils are tender, about 10 minutes.
Stir in the ham, couscous, apples and 3/4 cup of water. cover and cook until the stew is slightly thickened, about 4 minutes. Season with salt and black pepper.
