Ingredients:
3/4 pound sliced bacon, diced
1/2 cup chopped onion
2 cups water
1 1/2 cups sugar
1 cup cider vinegar
1 jar (2 oz.) diced pimentos, drained
2 Tblsp Dijon mustard
1 tsp salt
1/4 tsp fresh ground pepper
3 Tblsp corn starch
2 Tblsp cold water
Cook the bacon in a large skillet until crispy; reomve the bacon and set it aside. Drain off the grease reserving about 2 tablespoons of drippings in the skillet. Add the onion and saute until tender; remove from the heat. Add the vinegar, water, sugar, pimentos, mustard, salt, pepper and bacon, mix well. Combine the cold water and corn starch until blended, then stir into the mixture. Cook over medium heat until the mixture comes to a boil. Boil for 2 minutes, stirring constantly. Serve warm.
