4 eggs | 1 bunch of shallots, chopped |
1 tsp. salt | 2 medium onions, chopped |
1/4 tsp. pepper | 1/2 C. olive oil |
1 packet frozen spinach (thawed) | 375 g fillo pastry |
375 G fetta cheese (grated) | butter |
Beat eggs, salt and pepper. Squeeze moisture out of the spinach. Add spinach, fetta, shallots, onions and oil to the egg mixture. Combine. Line a pie dish with layers of fillo pastry, brushing every second sheet with butter. Reserve enough fillo pastry to form a lid for the pie. Place filling into pie dish, top with remaining pastry and brush with butter.
Cook in a moderate oven for approximately 45 mins.
