Turkey Rice Casserole

This is a variation of the chicken and rice dinner.
Ingredients
4 turkey breasts
1 cup uncooked long-grain or brown rice
1 cup chicken stock
1 can cream of chicken soup
1/4 cup chopped onion
1/2 cup chopped carrot
1/2 cup chopped celery
1/8 tsp rubbed sage
1 teaspoon dried parsley flakes
1/8 teaspoon paprika
Cooking
- Preheat oven to 350 degrees.
- Prepare casserole dish with non-stick spray.
- Pour in rice, chicken stock, cream of chicken soup, onion, carrot, celery and sage. Mix well.
- Place turkey breasts over rice.
- Sprinkle with paprika and parsley flakes.
- Cover and bake at 350 for one hour or until turkey is no longer pink.
For a different taste, try cream of celery soup or cream of mushroom soup instead of cream of chicken.
