Vatrushky (cheese tarts)Vatrushky is plural form of the word vatrushka, the second syllable is stressed. Vatrushka is a savoury open tart with cottage cheese. It's a very common Ukrainian national snack.
200g of butter Chop the butter together with flour, in order to get something like buttery grains. Pour the salted sour cream into it. Quickly knead the dough, and put it for 10 or 15 minutes in refridgerator. Make the filling. Mix the cottage cheese, 1 tbsp of sour cream, an egg, and add some salt. When the dough is chilled, roll it out. Separate round flat shapes out of it with some circular form. Put the filling onto each of the flans, thicken the edges of the flans, leave the center open. Brush each vatrushka with egg and put into the hot oven. When the dough is baked, and has slightly reddish colour, get them out of the oven. Vatrushkas are often served with borsch.
