Recipe of Week ~ " Walking By His Side " ~ Creamy Potato Salad

Here we go again. This Patsy Cline song appeared as SOW a little more than a year ago, just prior to the launching of Patsifan Lisa Flood's fabulous website Patsified! But, rather than re-run Lisa's recipe for " If I Hadn't Cheated " Easy Napoleans , this week I present you with a dish on the side, er... I mean side dish! Yes, we're going to cheat on our calories once again. Instead of having a light, lo-cal green salad on the side, may I suggest this delicious potato salad -- a perfect side dish to any sandwich. Add a pickle, and you're all set.

You'll Need:

• 3 cups cooked potatoes (sliced or chopped)
• 2 1/2 tsp. sugar
• 1 tsp. cider vinegar
• 1/2 cup finely chopped onion
• 1/2 cup finely chopped celery
• 2/3 cups of chopped sweet gherkin pickles
• 1 1/2 tsp. salt (or to taste)
• 1/2 tsp. celery seed ( don't over do )
• 3/4 to 1 cup of mayonaise (depends on your taste)
• 2 hardboiled eggs ~ sliced and chopped
  

  Boil potatoes until tender, allow to cool enough to handle. Peel skins away from potatoes with paring knife. Slice potatoes into a large bowl. Srinkle the potatoes with the cider vinegar and the sugar. Add the onion, celery,pickle and seasonings; mix well. Add the mayonaise and mix lightly. Gently stir in the chopped egg. Refrigerate until cold. Serve as a side dish with your favorite sandwich.
