Red Cabbage Pie
This one is a real surprise! We love pies in England! And to make one out of red cabbage was a shock to the Bulgarians who see this very much as a salad or pickle type food. You can serve this with mashed or baked potatoes - or check out the "topping" detailed at the end of the recipe.
1 tablespoon sunflower oil
Preheat the oven to 180C/350F/Gas4. Heat the oil in a large pan and soften the onion. Then add the carrots, red cabbage, celery and apple and fry for 3 minutes!. Stir in paprika and flour. Then add the stock, tomato puree, sugar, wine vinegar and seasoning. Bring to the boil. Transfer to an oven dish. Cover and bake for one hour. If you want to add a topping, boil 675g potatoes for 20 minutes and then add a little chopped up green cabbage - boil for another 5 minutes. Drain and mash with butter and yogurt. Spoon over the cooked red cabbage, dot with butter and sprinkle with paprika. Bake uncovered until golden!!
Baked Spinach with Rice and Cheese
half a kilo or more fresh, washed, chopped spinach
Heat the oven to 180C/350F/Gas4. Melt the butter in a pan
and cook the onion until soft. Add the rice and add the hot water.
Stir carefully then simmer with a lid on until cooked! Cool the rice.
Spinach and Potato Moussaka
1 onion, finely chopped 3 soupspoons oil 3 soupspoons chopped parsley black pepper half a kilo of potatoes 2 eggs, beaten 1 teacup of natural Greek yogurt salt Boil the potatoes in their skins. Let them cool a little, peel off the skins and chop into chunks. Wash the spinach well, pop it in a pan, add a little water and bring to the boil. Add salt and put the lid on. Cook for a couple of minutes, stirring if necessary. Fry the onion in oil, and add the spinach. Then add the cubed potato, parsley and ground pepper. Mix well, then put it into a baking dish. Bake in a medium oven until it begins to brown. Stir the eggs and yogurt together and pour over the spinach and potatoes. Cook until golden on top. |
