1 kg chicken breasts
2 tbsp honey
juice of 3 lemons + rind of 1 lemon
5 garlic cloves crushed
1 tsp crushed ginger
1 tsp red chilli powder
salt and pepper to taste
3 tbsp oil
Method
Lightly prick the chicken breasts with a fork.
Mix the remaining ingredients together and cooked over medium heat for about 10 mts. Marinate the chicken in this mixture, covered in the fridge, for 6-8 hours or overnight.
Grill for about 15 minutes or until cooked through, brushing frequently with marinade and turning twice.
