Egg Foo Yung

Ingredients

4 eggs
1 tbsp soy sauce
1 tbsp vegetable oil
2 oz cooked ham, shredded
3 oz bean sprouts
4 scallions, finely chopped

Method

Preheat broiler. In a small bowl, beat eggs with soy sauce until just mixed.

Set 7-inch omelet pan over low heat to become thoroughly hot. Add oil. When hot, stir in ham, bean sprouts and scallions. Cook, stirring constantly, 2 minutes.

Pour in eggs and stir with a fork until mixture has just set. Broil until golden-brown, about 1 minute.

Garnish with scallions, if desired.
