Ingredients
1 1/2 c rice
10 c water
1 1/2 c mixed vegetables (carrots, beans, onions, capsicum, peas), finely diced
1 tsp minced ginger
2 tsp minced garlic
2 tbsp soya sauce
1 tsp ajinomoto
3 tbsp oil
salt and pepper
omelette strips to garnish
Method
In a pan, bring water to a boil. Add salt and rice. Boil rice until tender. Drain and let it cool.
Heat a wok. Add oil. Swirl oil until it coats the wok. When the oil is very hot, add the ginger, garlic. Then add the mixed vegetables, salt, pepper and stir-fry for 2-3 minutes, until the vegetables are just about tender.
Add the rice, soya sauce, ajinomoto and stir-fry for 1 minute, mixing well.
Granish with omelette strips and serve hot.
