Ingredients
2 tbsp vegetable oil
750g chicken breast fillets, skinned, cut crosswise into thin strips
250g red plums, pitted, thinly sliced
1/4 c port wine
6 tsp red-wine vinegar
grated rind of 1 orange
juice of 1 orange
2 tbsp Chinese plum sauce
4 scallions cut into thin strips
1 tbsp soy sauce
4 whole cloves
small piece cinnamon stick
1/2 tsp Chinese chili sauce or to taste
parsley, to garnish
grated orange rind, to garnish
Method
Heat a wok until hot. Add oil and swirl to coat wok. Add chicken strips and stir-fry 3 or 4 minutes or until browned. Remove to a bowl.
Add plums, port, vinegar, orange rind, orange juice, plum sauce, scallions, soy sauce, cloves, cinnamon stick and chili sauce to taste. Simmer 4 or 5 minutes or until plums begin to soften.
Return chicken strips to wok and stir-fry 2 minutes or until duck is heated through and sauce is thickened.
Garnish with parsley and grated orange rind. Serve with noodles.
