Ingredients
2 tbsp sesame oil or vegetable oil
250g Chinese sausage or sweet Italian-style sausage, cut diagonally into thin slices
1 onion, cut in half lengthwise, sliced
1 red bell pepper, diced
1/2 c canned baby corn
2 zucchini, thinly sliced
1/2 c snow peas
8 scallions, cut into 1-inch pieces
1/4 c bean sprouts, rinsed, drained
1/4 c cashews or peanuts
2 tbsp soy sauce
3 tbsp dry sherry or rice wine
Method
Heat a wok until hot. Add oil and swirl to coat wok. Add sausage slices and stir-fry 3 or 4 minutes or until browned and cooked.
Add onion, bell pepper and baby corn and stir-fry 3 minutes. Add zucchini, snow peas and scallions and stir-fry 2 minutes.
Stir in the bean sprouts and nuts and stir-fry 1 or 2 minutes. Add soy sauce and dry sherry and stir-fry 1 minute or until vegetables are tender but still crisp and sausage slices completely cooked through.
Serve with rice or noodles.
