Ingredients
12 jumbo prawns, cleaned, deveined and preferably with tails on
3 tbsp soya sauce
1 1/2 tbsp finely chopped garlic
1/4 c self-raising flour
2 tbsp rice flour
1/2 c cold water
2 tbsp toasted sesame seeds
salt and pepper
1 tsp red chilli paste or chilli sauce
2 tsp sesame oil
oil for frying
chilli sauce for serving
Method
Marinate prawns in soya sauce and chopped garlic for 15 minutes.
Sift flours in a bowl. Stir in the sesame seeds, chilli paste, sesame seeds, chilli paste, sesame oil, salt and pepper. Add enough cold water to form a thick batter.
Heat oil to moderately hot in a wok. Dip prawns into the batter and deep fry in batches until golden brown (approximately 2 minutes).
Drain on a paper towel and serve hot with chilli sauce.
