Ingredients
12 oz fusilli
1/4 c olive oil
1 bunch of scallions, chopped
1 clove garlic, finely chopped
salt and freshly ground pepper
8 oz cherry tomatoes, quartered
5 oz mozzarella cheese, diced
1/2 cup grated Parmesan cheese
1 small bunch of basil leaves
12 pitted black olives, halved
Method
Cook pasta in a large pan of boiling salted water as directed on package, until just tender. Drain.
Heat olive oil in a small saucepan. Add scallions and cook, stirring occasionally, 2 or 3 minutes. Add garlic and cook for 2 minutes.
Add pasta, salt and pepper to the scallion mixture.
Add tomatoes and stir over low heat, to warm through. Stir in cheeses.
Coarsely tear basil leaves in halves or thirds, add to pasta with olives and serve immediately.
