Baked Fish Italienne

Ingredients

2 tbsp butter

2 c sliced mushrooms
1 recipe tomato sauce
4 white fish steaks, such as cod, about 5 oz each
salt and pepper
1 cup pasta shells
8 black olives
1/2 c grated parmesan cheese

Method

Preheat oven to 375F (190C). In a medium-size saucepan, melt butter.

Add mushrooms and cook gently until soft. Stir in Tomato Sauce.

Put fish into a buttered ovenproof dish. Season with salt and pepper. Pour tomato and mushroom sauce over fish. Top with grated parmesan cheese.

Cover dish with foil; bake about 25 minutes or until fish is opaque when tested with a fork. Meanwhile, cook pasta until just tender to the bite. About 5 minutes before fish has finished cooking, arrange pasta around fish, spooning some of sauce over pasta. Garnish with olives and serve.
