Pizza Napolitana

Ingredients

1 recipe Basic Pizza Dough, rolled out into a 1/4 inch thick circle
3 tbsp olive oil
1/2 kg tomatoes, peeled, deseeded, chopped
1 clove garlic, crushed
1/4 c mozzarella cheese
1 can (2 oz) anchovy fillets, drained
1 tbsp chopped fresh oregano
salt and pepper

Method

Preheat oven to 425F (220C). Brush dough with 1 tablespoon oil.

Spread tomatoes over dough. Sprinkle with garlic; season to taste with salt and pepper.

Slice cheese thinly. Arrange over tomatoes. Chop anchovies and sprinkle over cheese. Sprinkle with oregano and remaining oil.

Bake 20 minutes until cheese has melted and dough is crisp and golden. Garnish with oregano leaves. Serve at once.
