Ingredients
6 oz penne
1 1/4 c half-and-half
1/2 c grated Parmesan cheese
3 oz Gruyere cheese, cut into small dice
3 oz soft goat cheese
3 oz mozzarella cheese, cut into small dice
salt and pepper
chopped chives, for garnish
Method
In a large saucepan of boiling salted water, cook penne until just tender to the bite. Drain penne.
Put half-and-half in a large saucepan with half of Parmesan cheese.
Add Gruyere cheese, goat's cheese and mozzarella cheese. Cook over low heat until cheeses are melted. Season with pepper.
Add drained penne to cheese mixture. Stir well. Sprinkle with remaining Parmesan cheese and chives.
Serve immediately.
