Ingredients
1 oz prosciutto
12 basil leaves
6 tbsp unsalted butter
2 cloves garlic, crushed
4 oz peeled shrimp
12 oz fresh spinach fettuccini
1/4 cup grated Parmesan cheese
1/2 c fresh cream
salt and pepper to taste
Method
Bring a large saucepan of salted water to the boil, add fettucine and cook for 3 minutes, or until al dente; drain thoroughly.
Cut prosciutto into julienne strips. Tear basil leaves in half.
In a large frying pan, melt butter, add garlic and fry gently for 1 minute. Add prosciutto, shrimps and cook for 1 minute.
Add cream and basil and cook for another 1 or 2 minutes. Add half the Parmesan, and salt and pepper to the sauce; stir well.
Add the fettucine and toss thoroughly to coat with the sauce.
Sprinkle with remaining Parmesan. Serve immediately.
