Ingredients
2 large tomatoes, sliced
6 oz mozzarella cheese, sliced
1 small red onion, sliced, separated into rings
1/4 cup olive oil, extra virgin
1 tbsp fresh basil leaves
1 tbsp pine nuts
2 tbsp balsamic vinegar
1 garlic clove, finely minced
salt and black pepper to taste
Method
Arrange tomato slices and cheese slices on a plate. Top with onion rings.
Mix the vinegar, garlic, oil, salt, pepper and drizzle over the salad.
Sprinkle with basil and pine nuts and serve.
