Ingredients
1 tbsp grated onion
1 garlic clove, crushed
1-2 green chillis, seeded and finely chopped
1 1/2 L chicken or vegetable stock
1 tbsp cilantro, chopped
2 avocados, peeled and seeded
juice of 1 lime
salt and pepper
1 tsp oil
sour cream for garnish
Method
Heat oil in a pan and add the onion, garlic and chilli. Cook till the onion softens.
Add the stock, cilantro and simmer for 10 min. Season with salt and pepper.
Puree the avocados in a blender with a little hot stock and lemon juice. Pour the avocado puree into the stock, whisking well to blend.
Heat gently. Do not let the soup boil or it will become bitter. Serve with a dollop of sour cream.
