Cauliflower Salad (Ensalada de coliflor)

Ingredients

1 medium cauliflower, broken into florets
1 c guacamole (see recipe)
1 tomato, chopped
1/2 tsp aniseed powder
salt and pepper

Method

Cook the cauliflower florets in boiling salted water, until barely tender . Refresh in cold water and allow to cool.

Thin down the guacamole with water to make a dropping consistency.

Arrange the cauliflower on a serving dish. Sprinkle aniseed powder and pepper. Spread the guacamole on it. Top with chopped tomato.
