Ingredients
4 large pizza bases
1 shallot, chopped
2 tbsp chilli garlic sauce
1 can red kidney beans, drained
2 tomatoes, cut into rounds
3 spring onions, chopped
1 1/2 c canned corn, drained
2 tbsp chopped jalapeno peppers
2-3 c grated mozzerella and parmesan cheese
salt and pepper
2 tbsp oil
Method
Heat oil in a pan and fry the shallot until translucent. Add the kidney beans, chilli garlic sauce, salt and pepper and cook for a few minutes. Mash coarsely into a paste.
Cool the bean paste slightly and spread over the pizza bases. Top with the corn, tomato rounds, jalapeno peppers and spring onions. Sprinkle with cheese generously.
Bake in a moderate hot oven, at about 190C for 15 min or until cheese is bubbly and golden brown.
