Ingredients
1 c long-grain rice
2 c stock or water for cooking + extra water for soaking the rice
1 onion, peeled, roughly chopped
1 clove of garlic, peeled, roughly chopped
4 tbsp oil
3/4 frozen or canned corn
salt and pepper
Method
Soak the rice in very hot water for 15 min. Rinse well in cold water and drain.
Blend the stock or water, onion, garlic, salt and pepper in a blender.
Heat oil in a pan. Add the rice and fry for about 5 min. Pour in the stock mixture, bring to a boil, cover and cook till rice is almost done.
Fork in the corn, cover and cook till rice and corn are done. Leave to rest, covered for 10 min.
