Ingredients
1 small onion, finely chopped
500 g tomatoes, peeled, chopped
1 tbsp tomato paste
1/2 tsp cayenne pepper
1 tsp ground cumin
salt and pepper
8 tortillas
185g white crabmeat
60 g mozzarella cheese, grated
shredded lettuce for garnish
4 tablespoons sour cream
1 tbsp vegetable oil
Method
In a saucepan, heat oil, add onion and fry until softened. Add tomatoes, tomato paste, cayenne pepper, salt and pepper. Bring to a boil, then simmer, uncovered, for about 20 minutes, until thick.
Spread a little sauce over each tortilla, sprinkle with crabmeat and mozzarella, then roll up, tucking in the ends.
Top with shredded lettuce and dollops of sour cream. Serve any remaining tomato sauce separately.
