Ingredients
1 c water
1 tbsp sugar
90g butter, cut into pieces
1 c plain flour
2 eggs
1/2 c icing sugar
1 tbsp cinnamon powder
oil for frying
Method
In a pan, add water, sugar and butter. Stir over heat till the butter melts. Bring to a boil. Add all the flour at once and stir vigorously until the mixture forms into a ball.
Remove the pan from the heat. Cool a little and beat in the eggs, one at a time, until well mixed and glossy.
Put the mixture in a piping bag fitted with a 1 cm star nozzle and pipe out 3 inch tubes of dough on a greaseproof paper. Deep fry the fritters, in batches, in medium hot oil, until light brown and cooked through. Drain on absorbant paper.
Sift the cinnamon powder and icing sugar and toss the fritters in this mixture. Serve warm or at room temperature.
