Ingredients
4 tortillas
4 eggs
1/3 chopped parsley
8 dollops sour cream
6 tomatoes, skinned, deseeded and chopped
1 onion, chopped
2 cloves garlic, crushed
2 green chillis, chopped
oil for frying
salt and pepper
Method
Blend the tomatoes, onion, garlic, chillis until chunky but not smooth. Cook for 5-10 min until slightly thickened. Season with salt and pepper.
Heat oil in a pan and fry the tortillas. Drain on absorbant paper.
Drain the excess oil and in the same pan, make fried eggs, 2 at a time.
Place one egg on the tortilla; spoon over the tomato sauce, leaving the egg exposed. Sprinkle with parsley and 2 dollops of sour cream. Similarly, assemble the remaining tortillas. Serve immediately.
