Mango Sorbet (Nieve de mango)

Ingredients

2 mangoes (about 350g each), peeled and cut into big chunks
1/2 c sugar
juice of 2 limes
grated rind of 1 lime
1 c water
1 egg white

Method

Puree the mango flesh in a food processor. Strain if it is too fibrous.

Put the puree in a glass bowl. Add the lime juice, lime rind, water, sugar and stir well. Freeze until semi-hard.

Put the mixture and the egg-white in a food processor and process until pale and snowy. Refreeze until firm.
