Ingredients
4 medium potatoes
4 tbsp grated cheese for filling + extra 3 tbsp for topping
2 tbsp cooked corn (frozen or canned or fresh)
2 tbsp heavy cream
1 tbsp finely chopped coriander leaves
1 tsp chopped jalapeno peppers or green chillis
salt and pepper
Method
Wash and clean the potatoes thoroughly and prick with a fork. Wrap individually in a foil and bake in a hot oven at 200C (400F) for about 45 min or until cooked.
Allow to cool a bit and then cut each potato length-wise into two. Scoop out the centre of each half. Mix the scooped out potato with the remaining ingredients. Taste and adjust seasoning.
Stuff this mixture generously back into the potatoes. Top with the reserve grated cheese.
Bake in a moderate oven at about 180C (350F) for about 5-10 min or until the cheese melts and the potatoes are warm.
