Ingredients
3 tomatoes
1/4 head iceberg lettuce
1 onion, finely chopped
1 clove garlic, crushed
1 fresh green chili, cored, seeded, finely chopped
250g cooked turkey, shredded
1 tablespoon chopped fresh cilantro
salt
6 taco shells
2/3 c sour cream
2 tbsp oil
Method
Finely chop tomatoes and set aside. Finely shred lettuce and set aside.
Heat oil in a skillet, add onion, garlic and chili and cook, stirring occasionally, 5 minutes, until soft. Add turkey and cook 2 minutes. Stir in cilantro and salt and keep warm.
Warm the taco shells. Spoon the turkey mixture into the shells and top with lettuce, diced tomato and a spoonful of sour cream.
