Ingredients
1/4 c butter
1/4 c sugar
2 oranges, peeled, segmented
1 can (12 oz) pineapple pieces in natural juice
4 bananas, thickly sliced
1 tbsp orange liqueur or brandy
mint sprigs, to garnish
Method
Put butter and sugar in a flameproof casserole dish and cook over low heat until melted and a caramel color.
Add oranges, pineapple chunks and their juice and bananas. Bring to a boil and boil 5 minutes, or until sauce thickens.
Put liqueur or brandy in a ladle and warm gently. Set alight and pour over fruit. Cook 1 minute, until flames die down.
Garnish with mint and serve warm.
