Warm Goat Cheese Salad

Ingredients

6 slices French bread
1 clove garlic, halved
1 log goat cheese (5-inches)
7 oz mixed salad greens
1/2 cup walnuts, coarsely chopped
1 tbsp balsamic vinegar
1/4 c olive oil
2 tbsp walnut oil
salt and freshly ground pepper

Method

To make the dressing, put vinegar, olive oil, walnut oil, salt and pepper in a bowl and whisk together. Set aside.

Preheat broiler. Toast bread slices lightly on both sides. Rub one side of each slice with cut face of garlic clove.

Cut cheese into 6 slices and place a slice on garlic side of each toast slice. Broil 4 or 5 minutes or until slightly browned but not melting.

Put salad greens in a bowl, add dressing and toss. Arrange salad on serving plates. Place cheese toasts on salad, sprinkle with walnuts and serve immediately.
